FRIED RICE GUAM STYLE

 

4 cups of cooked rice

1 pound of bacon

2 eggs

1 cup of diced ham

1 small can of shrimp

½ cup of scallions

Garlic powder

Reduced sodium soy sauce

The rice needs to be cool. Crispy fry the bacon. Keep about half of the bacon fat in the pan. Fry the onion in the fat. Add in the rice. Cook over medium heat for 3 minutes until the rice doesn’t stick together. Crumble the bacon and toss it in there too. Also the drained shrimp. Mix it up. Make a hole in the rice in the middle of the pan. Beat the eggs and pour them in. Fry until done. Incorporate into the rice. Season with the garlic and soy sauce.
