CHEESY DIPPING COATING AND MIXING SAUCE

1 pound of cheese
3.5 cups of milk
0.5 cup of flour
1 cup of butter

Melt butter. Don’t scorch. Add flour, a little at a time. Do not stop stirring. When your roux gets pasty, start adding the milk. Whisk constantly, adding 0.5 cup of milk at a time. When it thickens to creamy, add in chunked cheese. Don’t stop stirring. If you need a thinner sauce, cut the cheese in half.
